Food trucks were loved before the pandemic, but COVID made them essential. When dining in was no longer an option, drive-up restaurants became even more popular.
Even better: Many food trucks are run by women, people of color, and immigrants — who are normally relegated to the edges of the economy — and who are creating the foundation upon which the next economy will be built.
